Strawberries-and-Cream Tart
TART SHELL (MAKES 12¾ OUNCES DOUGH)
Cream butter and sugar together until light. Add egg and blend well. Add flour and mix on low speed until fully incorporated. Chill for 30 minutes.
Roll out dough until it is 1 inch bigger than a 12-inch pan. Place in pan. Remove excess dough from edges and bake at 375 degrees until the shell is pale golden.
FILLING (FOR A 12-INCH TART)
Beat cream cheese until soft and then spread in baked tart shell. Mash strawberries to measure 1 cup. Mix sugar and cornstarch in saucepan. Stir in water and mashed strawberries. Cook on medium heat, stirring constantly until it boils. Boil 1 minute.
